Balanced and powerful, these 10-inch shears have curved, high-carbon, stainless-steel blades for cutting apart poultry. One blade is notched to cut through bones easily. Handles are made of tough polypropylene and, for storage, they lock at their butt end with a short arm that swivels into place. The sturdy barrel spring between the blades ensures the blades move precisely. The blades themselves curve inward so they meet in only one place at any given position and cutting action is smooth and exact. Though they would go safely through a dishwasher, fine shears like these should be hand washed to protect the blades' edges. They carry a lifetime warranty against defects. --Fred Brack
