Offering the uniqueness of a 10-degree angled handle that increases leverage and control, this 6-inch utility knife from the Alton's Angled collection of Shun knives will slice sandwiches, trim fat and a variety of other prep tasks with a blade that ensures the ultimate in precision. It's paired with a seamless one-piece stainless steel bolster, D-shaped handle, and end cap. The wavy, Damascus-look pattern on the blade creates minute air pockets that allows food to release easier--plus it's rust-free.

More than just a celebrity endorsement, the Food Network's Alton Brown was instrumental in designing Alton's Angled knives for Shun. The quest for Alton Brown's perfect knife began when he first approached Shun to ask that his beloved Shun vegetable knife be altered slightly. Brown, host of the long-running Good Eats cooking-as-science show on Food Network, loved the blade of the knife, but his knuckles kept hitting the cutting board. To save his knuckles, Shun and Brown developed this line of angled knives, which would allow users to both firmly grasp the knife and fully contact the cutting board with the blade. The 10-degree angle added to the handle also creates a natural curve between the blade and the user's arm that makes controlling the blade even easier and more precise.

The blade is made from VG-10 steel with a high carbon content for a higher density. This allows the steel to be tempered to a Rockwell hardness of 61, and still have the flexibility and strength to take and keep a perfect edge. VG10's natural tendency is to remain straight and true, so when it is used, the edge of the blade naturally straightens out and stays sharper longer. Shun's cutting edge is ground to an angle of 16 degrees making them extremely sharp; compare this to the best German knives which are only ground to only 22 degrees. The exotic Japanese steels used in the cutting core of our knives allow them to hold these razor sharp edges without the need for excessive re-sharpening.

Shun knives rely on traditional Japanese construction methods, including a full composite tang, in order to ensure the best balance. The D-shape of the stainless steel handle was designed to tuck into the palm and provide more control to the user by leaving less space between handle and hand (the handle also fits nicely between the thumb and fingers of a left-handed user). This knife is backed by a lifetime warranty. Dishwasher safe, though hand washing is recommended. Made in Japan.
