Ceramic knives are the best for the kitchen. There is no difference between the black and white ceramic, it is strictly for looks. They are extremely sharp, glide through vegetables without bruising them and do not transfer a metallic taste like regular knives do. You do have to be extra carefull with these knives, they are ceramic and will shatter or break if hit against the sink or a heavy pan is laid on them. You also must use a synthetic, plastic, cutting board and not wood or marble. With proper care of these knives they stay sharp and will last forever.
